A hearty and delicious one-pot creamy vegetable soup, perfect for chilly evenings.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups mixed vegetables (e.g., potatoes, green beans, peas)
- 1 cup heavy cream or coconut milk
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or basil) for garnish
- Bread for serving
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Add the vegetable broth and bring to a boil.
- Stir in the mixed vegetables and thyme, then reduce the heat and let it simmer until the vegetables are tender, about 10-15 minutes.
- Remove from heat and stir in the heavy cream or coconut milk. Season with salt and pepper.
- Serve hot, garnished with fresh herbs and accompanied by bread.
Notes
For a thicker soup, blend a portion before adding cream. Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
