Comforting Chicken Soup with Potatoes

A warm and hearty chicken soup with tender chicken, hearty potatoes, and flavorful broth, perfect for chilly days.

  • 2 chicken breasts (boneless and skinless)
  • 3 medium potatoes (peeled and diced)
  • 4 cups chicken broth
  • 1 onion (chopped)
  • 2 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion becomes soft.
  3. Add the sliced carrots and diced potatoes to the pot. Stir well for a few minutes.
  4. Cut the chicken breasts into small pieces and add them to the pot.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce the heat, cover the pot, and let it simmer for about 20-25 minutes, or until the chicken and potatoes are cooked through.
  7. Add salt and pepper to taste, then stir in fresh parsley before serving.

Notes

Serve hot with crusty bread or a side salad. Store leftovers in an airtight container for up to 3 days in the refrigerator or up to 3 months in the freezer.
