Ingredients
- 2 chicken breasts (boneless and skinless)
- 3 medium potatoes (peeled and diced)
- 4 cups chicken broth
- 1 onion (chopped)
- 2 carrots (sliced)
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion becomes soft.
- Add the sliced carrots and diced potatoes to the pot. Stir well for a few minutes.
- Cut the chicken breasts into small pieces and add them to the pot.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat, cover the pot, and let it simmer for about 20-25 minutes, or until the chicken and potatoes are cooked through.
- Add salt and pepper to taste, then stir in fresh parsley before serving.
Notes
