Classic Italian Pastina Soup

  • 1 cup pastina (star-shaped pasta)
  • 1 lb chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a pot, heat a little oil over medium heat. Sauté the onion, garlic, carrots, and celery until soft.
  2. Add the chicken broth and bring to a boil.
  3. Stir in the pastina and cook according to package instructions.
  4. Once the pasta is al dente, add the shredded chicken and season with salt and pepper.
  5. Serve hot, garnished with fresh parsley.
