Ingredients

  • 8 ounces pasta (your choice)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  3. Stir in the cooked chicken and mixed vegetables.
  4. Pour in the chicken broth and heavy cream; bring to a simmer.
  5. Add thyme, salt, and pepper. Let it cook for about 5-7 minutes until the sauce thickens.
  6. Stir in the cooked pasta and mix well.
  7. Garnish with fresh parsley before serving.
