Chicken Sausage and Broccoli Orzo

A delicious one-pot meal combining savory chicken sausage, tender broccoli, and comforting orzo pasta, perfect for weeknight dinners.

  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat and add the sliced chicken sausage; cook 5–7 minutes until browned.
  2. Add minced garlic and cook for about 1 minute until fragrant.
  3. Stir in broccoli florets and cook for 2–3 minutes until they start to soften.
  4. Add orzo, chicken broth, Italian seasoning, salt, and pepper; bring to a boil, then reduce to a simmer.
  5. Cover and simmer for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  6. Remove from heat and stir in Parmesan cheese until melted.
  7. Garnish with chopped parsley and serve. Optional: stir in a splash of heavy cream before serving for a creamier texture.

Notes

Make sure not to overcook the orzo; check it a minute or two before the suggested cooking time. For added flavor, sprinkle extra Parmesan on top before serving.
