Description

A warm, cheesy sandwich filled with shredded chicken and creamy avocado that’s quick to make and tastes fresh.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado
  • 4 slices sourdough or whole grain bread
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tablespoons mayonnaise or Greek yogurt
  • 1 tablespoon Dijon mustard (optional)
  • Butter or olive oil for toasting
  • Optional add-ins: tomato slices, red onion, crispy bacon, fresh spinach or arugula


Instructions

  1. In a bowl, mix shredded chicken with mayonnaise (or Greek yogurt), Dijon mustard (if using), and a pinch of salt and pepper.
  2. Mash the avocado with a little lime or lemon juice and a pinch of salt.
  3. Spread avocado on one side of two bread slices, then top with chicken mixture, cheese, and any optional add-ins. Close with remaining slices of bread.
  4. Heat a skillet or grill pan over medium heat with butter or oil. Cook sandwiches 3–4 minutes per side, pressing slightly until bread is golden and cheese is melted.
  5. Serve warm, sliced if desired.

Notes

Use ripe but firm avocado for best texture. Store leftover filling in the fridge for 2–3 days but do not store a fully made sandwich with mashed avocado.
