Description
A warm, cheesy sandwich filled with shredded chicken and creamy avocado that’s quick to make and tastes fresh.
Ingredients
- 2 cups cooked chicken, shredded
- 1 ripe avocado
- 4 slices sourdough or whole grain bread
- 1 cup shredded mozzarella or cheddar cheese
- 2 tablespoons mayonnaise or Greek yogurt
- 1 tablespoon Dijon mustard (optional)
- Butter or olive oil for toasting
- Optional add-ins: tomato slices, red onion, crispy bacon, fresh spinach or arugula
Instructions
- In a bowl, mix shredded chicken with mayonnaise (or Greek yogurt), Dijon mustard (if using), and a pinch of salt and pepper.
- Mash the avocado with a little lime or lemon juice and a pinch of salt.
- Spread avocado on one side of two bread slices, then top with chicken mixture, cheese, and any optional add-ins. Close with remaining slices of bread.
- Heat a skillet or grill pan over medium heat with butter or oil. Cook sandwiches 3–4 minutes per side, pressing slightly until bread is golden and cheese is melted.
- Serve warm, sliced if desired.
Notes
Use ripe but firm avocado for best texture. Store leftover filling in the fridge for 2–3 days but do not store a fully made sandwich with mashed avocado.
