Caramel Apple Cheesecake Bars

Delightful bars that combine the rich creaminess of cheesecake with sweet and tangy apples and caramel, perfect for any occasion.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 apples, peeled, cored, and diced
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In another bowl, beat the cream cheese, sugar, and vanilla until smooth. Add the eggs, one at a time, mixing well after each.
  4. Fold in the diced apples and cinnamon. Pour the mixture over the crust.
  5. Drizzle caramel sauce over the top of the cheesecake layer.
  6. Bake for 30-35 minutes or until set. The bars should not jiggle in the middle.
  7. Allow to cool, then refrigerate for at least 2 hours before cutting into bars.

Notes

For a stronger cinnamon flavor, feel free to add a bit more cinnamon. Use fresh apples for the best flavor.
