Description

A hearty and comforting Cajun Potato Soup with creamy texture and a kick of spice, perfect for a chilly day.


Ingredients

  • 1 andouille sausage, sliced
  • 4 potatoes, diced
  • 2 cups mixed vegetables (onions, bell peppers, celery)
  • 2 tbsp Cajun spices
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • Salt, to taste
  • Pepper, to taste
  • 4 cups chicken or vegetable broth


Instructions

  1. In a large pot, cook sliced andouille sausage over medium heat until browned.
  2. Add diced potatoes and mixed vegetables to the pot and sauté for a few minutes.
  3. Stir in Cajun spices, salt, and pepper to taste.
  4. Pour in chicken or vegetable broth and bring to a boil.
  5. Reduce heat and let simmer until potatoes are tender.
  6. Stir in heavy cream and cheddar cheese until melted and combined.
  7. Serve hot, garnished with additional cheese or herbs if desired.
