Ingredients
- 1 andouille sausage, sliced
- 4 potatoes, diced
- 2 cups mixed vegetables (onions, bell peppers, celery)
- 2 tbsp Cajun spices
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- Salt, to taste
- Pepper, to taste
- 4 cups chicken or vegetable broth
Instructions
- In a large pot, cook sliced andouille sausage over medium heat until browned.
- Add diced potatoes and mixed vegetables to the pot and sauté for a few minutes.
- Stir in Cajun spices, salt, and pepper to taste.
- Pour in chicken or vegetable broth and bring to a boil.
- Reduce heat and let simmer until potatoes are tender.
- Stir in heavy cream and cheddar cheese until melted and combined.
- Serve hot, garnished with additional cheese or herbs if desired.
