Brussels Sprout, Kale + Apple Salad

A fresh and vibrant salad combining crunchy Brussels sprouts, kale, and sweet apples with bacon and sharp cheddar cheese, all dressed lightly.

Ingredients

  • Brussels sprouts
  • Kale
  • Apple
  • Sharp cheddar cheese
  • Bacon
  • Pecans
  • Olive oil
  • Apple cider vinegar
  • Salt
  • Pepper

Instructions

  1. Prepare the Brussels sprouts by trimming and slicing them thinly.
  2. Wash and chop the kale, removing the stems.
  3. Dice the apple and chop the cooked bacon.
  4. In a large bowl, combine the Brussels sprouts, kale, apple, cheddar cheese, bacon, and pecans.
  5. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper to create the dressing.
  6. Pour the dressing over the salad and toss until everything is well-coated.
  7. Serve immediately or let it sit for a bit to meld the flavors.

Notes

Best enjoyed fresh, store any leftovers in an airtight container. For optimal texture, add the dressing just before serving.
