Breakfast Casserole

A hearty breakfast casserole combining eggs, bacon, cheese, and veggies, perfect for busy mornings or special occasions.

  • 8 large eggs
  • 1 cup whole milk
  • 6 slices thick-cut bacon, cooked and crumbled
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup bell peppers, chopped
  • 1 cup sweet onions, chopped
  • 4 cups stale bread cubes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté onions and bell peppers in olive oil until soft.
  3. In a large bowl, whisk together eggs and milk; add sautéed veggies, crumbled bacon, bread cubes, cheese, salt, pepper, and paprika. Mix well.
  4. Grease a 9×13-inch baking dish and pour the mixture evenly into the dish.
  5. Bake for 30-35 minutes until golden brown on top and set in the center.
  6. Let it rest for about 10 minutes before cutting into squares.

Notes

Make sure your bread is stale for the best texture. Feel free to experiment with different vegetables or meats.
