Breakfast Casserole

A warm and hearty breakfast casserole, combining eggs, sweet potatoes, bacon, sausage, and veggies, perfect for family gatherings or meal prep.

  • 6 eggs
  • 2 cups cubed sweet potatoes
  • 1 cup cooked bacon, chopped
  • 1 cup cooked sausage, crumbled
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 cup spinach, chopped
  • 1 cup milk
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and milk.
  3. Add the sweet potatoes, bacon, sausage, bell pepper, onion, spinach, salt, and pepper to the egg mixture.
  4. Stir everything until well combined.
  5. Pour the mixture into a greased baking dish.
  6. If desired, sprinkle shredded cheese on top.
  7. Bake for 30-40 minutes or until the eggs are set and the top is slightly golden.
  8. Let it cool slightly before slicing and serving.
