Blueberry French Toast Casserole

A delightful dish combining classic French toast flavors and fruity blueberries, perfect for breakfast or brunch.

  • 1 loaf French bread, cut into cubes
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 cups fresh blueberries
  • 1/4 cup brown sugar
  • 1 tbsp unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish.
  3. Spread the bread cubes evenly in the dish.
  4. In a bowl, whisk together the eggs, milk, cream, sugar, vanilla extract, and ground cinnamon.
  5. Pour the egg mixture over the bread cubes and press down to soak all the pieces.
  6. Scatter the fresh blueberries on top.
  7. Sprinkle brown sugar over the casserole and drizzle melted butter.
  8. Bake in the oven for 45-50 minutes until the top is golden and the casserole is set.
  9. Let it cool for 5 minutes before serving.

Notes

Use stale French bread for better texture and let the casserole sit for about 30 minutes before baking for optimal absorption.
