Ingredients
- 8 oz gluten-free pasta
- 1 cup cooked bacon (or dairy-free alternative)
- 1 cup cherry tomatoes, halved
- 1 cup lettuce, chopped
- 1/2 cup dairy-free dressing (such as a vinaigrette)
- Salt and pepper to taste
Instructions
- Cook the gluten-free pasta according to the package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, cooked bacon, cherry tomatoes, and lettuce.
- Drizzle with dairy-free dressing and toss to combine.
- Season with salt and pepper to taste.
- Serve chilled or at room temperature.
Notes
For best texture, consume within 2-3 days. Add fresh lettuce before serving if it has wilted.
