The Best Creamiest Baked Mashed Potatoes

Deliciously creamy baked mashed potatoes that are rich, fluffy, and full of flavor. Perfect as a side for any meal.

  • 5 lbs russet potatoes, peeled and cubed
  • 8 tbsp salted butter, melted
  • 2 tbsp salted butter, cold
  • 8 oz cream cheese, softened and cubed
  • 1 cup half and half
  • 1/2 tsp salt
  • Pepper
  • Optional: chives on top

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel the potatoes and cut them into medium-sized cubes. Rinse thoroughly with water and drain.
  3. Add the potatoes to a large pot, cover with water, and add salt. Bring to a boil and cook until fork-tender, about 10-15 minutes.
  4. Drain the potatoes and return them to the pot.
  5. Turn the heat to low and let the potatoes steam for 3 minutes to remove excess moisture.
  6. Transfer to a large bowl or stand mixer and beat on low speed until broken up.
  7. Add warm melted butter, salt, and pepper. Mix in softened cream cheese and slowly add warm half and half until desired consistency is reached.
  8. Spread into a greased 9×13 baking dish. Cut cold butter into small cubes and sprinkle over the top.
  9. Bake for 45 minutes. Remove and serve warm!

Notes

For best results, use high-starch russet potatoes. Adjust seasoning before baking. Leftovers can be made into potato pancakes.
