A delicious and easy meal combining crispy chicken, spicy sauce, and fresh veggies, perfect for beginner cooks.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup plain yogurt (or mayonnaise)
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust for heat)
- 2 cups mixed greens (lettuce, spinach, or kale)
- 1 cup sliced cucumbers
- 1 cup shredded carrots
- 1 avocado, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
- Dip each piece into the panko breadcrumbs until fully coated.
- Heat olive oil in a pan over medium heat and cook the breadcrumb-coated chicken for 4-5 minutes on each side until golden brown and cooked through.
- In a bowl, mix yogurt, sweet chili sauce, and sriracha until combined to make the sauce.
- In a large bowl, layer mixed greens, then add cooked chicken, cucumbers, carrots, and avocado slices.
- Drizzle the Bang Bang sauce over the top and enjoy!
Notes
For extra crunch, double coat the chicken. Adjust sriracha to taste. Use seasonal veggies for added nutrition.
