Description
A rich and creamy comfort meal with crispy bacon, soft gnocchi, and melted cheddar cheese.
Ingredients
- 8-10 slices bacon, cooked and chopped
- 1 tbsp butter or olive oil
- 1 large onion, diced
- 2 large carrots, peeled and sliced
- 4 cups chicken broth
- 1-2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder (or 4 cloves minced garlic)
- ¼ tsp dried thyme
- ½-1 tsp red chili flakes (optional)
- 16 oz gnocchi
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese (medium or sharp)
Instructions
- Cook the bacon until crispy and chop it into small pieces; set aside.
- In a large pot, heat the butter or olive oil over medium heat. Add the diced onions and sliced carrots, and sauté until they are tender.
- Pour in the chicken broth and bring to a gentle simmer.
- Stir in the heavy cream, salt, pepper, garlic, thyme, and red chili flakes (if using); combine well.
- Add the gnocchi to the soup and cook for about 2 minutes or until they are soft.
- Stir in the chopped bacon and adjust seasoning to taste. Serve hot.
Notes
Use quality bacon for the best flavor. Sauté onions and carrots well for sweetness.
