Anti Inflammatory Turmeric Chicken Soup

Ingredients

  • 1 lb chicken breast
  • 1 tablespoon turmeric powder
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened.
  2. Stir in the minced garlic and turmeric, cooking for another minute until fragrant.
  3. Add the chicken breast and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Stir in the coconut milk, seasoned with salt and pepper. Cook for another 5 minutes.
  6. Serve hot, garnished with fresh parsley.

Notes

Sauté the vegetables until soft to enhance flavors. Adjust turmeric based on preference; add more for a stronger taste.
