Warm and comforting, this Anti Inflammatory Turmeric Chicken Soup is packed with health benefits and the natural anti-inflammatory properties of turmeric.
Ingredients
- 1 lb chicken breast
- 1 tablespoon turmeric powder
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup coconut milk
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened.
- Stir in the minced garlic and turmeric, cooking for another minute until fragrant.
- Add the chicken breast and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the coconut milk, seasoned with salt and pepper. Cook for another 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
Sauté the vegetables until soft to enhance flavors. Adjust turmeric based on preference; add more for a stronger taste.
