Amish Breakfast Casserole

A hearty casserole that combines hashbrowns, sausage, eggs, and cheese, perfect for breakfast or brunch.

  • 2 cups hashbrowns
  • 1 lb sausage
  • 6 eggs
  • 1 cup cheese (cheddar or your choice)
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • Green onions (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the sausage over medium heat until browned.
  3. In a large bowl, combine hashbrowns, cooked sausage, eggs, milk, salt, and pepper.
  4. Pour the mixture into a greased 9×13 inch baking dish.
  5. Top with cheese and green onions if desired.
  6. Bake for 45-50 minutes, or until the casserole is set and the top is golden brown.
  7. Let it cool slightly before serving.

Notes

For a creamier texture, add extra milk or use half-and-half. Can substitute sausage for bacon or omit meat for a vegetarian option.
