Amish Breakfast Casserole

A warm, hearty dish combining bread, sausage, and eggs that’s perfect for breakfast or brunch.

Ingredients

Scale
  • 1 lb cubed day-old bread (French, sourdough, or sandwich bread)
  • 1 lb breakfast sausage (crumbled)
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • 2 cups shredded cheddar cheese
  • 1 small onion, diced
  • 1 bell pepper, diced (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder (optional)
  • Butter or cooking spray (for greasing)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet, cook the sausage until browned. Drain any excess fat.
  3. Sauté the diced onions (and bell peppers if you’re using them) in the same skillet until softened.
  4. Spread the cubed bread evenly in the greased baking dish.
  5. Layer the cooked sausage, sautéed onions, and shredded cheese on top of the bread.
  6. In a bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
  7. Pour the egg mixture evenly over the casserole. Press gently so the bread soaks up the custard.
  8. Let the casserole soak for 10–15 minutes (or you can refrigerate it overnight if you are making it ahead).
  9. Bake uncovered for 45–50 minutes, or until the top is golden and the center is set.
  10. Let it rest for 5–10 minutes before slicing and serving.

Notes

Use day-old bread for better absorption of the egg mixture. This dish can be prepared a day in advance.
